Paulie’s the born-and-bred New Yorker. He grew up where the sauce was sacred, the steaks were prime, and every restaurant had a guy named Tony in the back making magic happen. With decades in the business, Paulie knows his way around a kitchen, a dining room, and a wine list. He brings the East Coast flavor: the bold, rich, unforgettable.

Then there’s Jamie, Johnny, and Jake: three Chicago boys through and through. Jamie’s the maestro of hospitality, with years of entertainment and service under his belt. He’s the guy who makes you feel like the most important person in the room (even if you’re just there for the meatballs). Johnny and Jake? These two built more than businesses — they built reputations. From construction to all things entrepreneurial, they know how to take a big idea and make it concrete. Literally.

And then came the missing piece: Chef Juan Obando. Every crew needs its heartbeat, and ours just happens to wear a chef’s coat. From Managua to Mexico to some of the finest kitchens in the world, Juan sharpened his craft until food stopped being just food and became an experience. Now he’s the one turning our ideas and our energy into plates that stop conversations mid-sentence. He’s not just in the kitchen: he’s part of the family, the guy who makes sure the story of 69 Prime gets told one dish at a time.
